Cooking Guidelines

Hob - General
15 mins
Rinse 100g cous cous thoroughly in cold water. Bring 150ml water or stock to the boil in a large saucepanon the medium hob ring over a high heat, add the cous cous. Stir, cover witha lid, reduce the heat to low and simmer for 5 minutes until most of the water has been absorbed. Remove from the heat, drain off any excess water and stand for 10 minutes. Separate the grains with a fork and use as required

Soy & Chilli vegetable stir fry
Preparation time: 25 minutes
Cooking time: 40 minutes

200g mung beans; 1 litre water; 100g Tesco Wholewheat Couscous; 1 tsp olive oil; 2 red peppers, sliced; 1 garlic clove, crushed; 1 medium red chilli, remove seeds and finely chop; 3 tsp fresh ginger, grated; 4 tbsp reduced salt soy sauce; 125g mushrooms, sliced; 100mg mangetout; 75g cashew nuts; 2 medium carrots, grated; 100g spring onions, finely sliced

1. Rinse the mung beans thoroughly and add to a medium saucepan with 1 litre of water over a medium heat. Bring to the boil and boil for 10 minutes, then reduce the heat to low and simmer for 20 minutes. Drain and rinse thoroughly
2. Meanwhile, cook the couscous following the on pack instructions
3. Heat the oil in a large wok over a high heat; add the peppers, garlic, chilli, ginger and 2 tablespoons of the soy sauce. Cook for 2-3 minutes, stirring constantly
4. Stir in the mushrooms and mangetout, cook for 2 minutes, then add the remaining soy sauce along with the cooked mung beans and couscous. Cook for a further 1 minute, stirring constantly
5. Add the cashew nuts, carrot and spring onion, cook for 1 minute and serve immediately


Store in a cool, dry place. Once opened, reseal using the tape provided
